The Boiling Crab
A well-known American restaurant chain specializing in Cajun cuisine, particularly seafood boils.
The Boiling Crab was founded in 2004 by Sinh Nguyen and Dada Ngo, a Vietnamese husband-and-wife team, in Garden Grove’s Little Saigon, California. The chain quickly gained popularity, especially in Southern California, and its success inspired many similar Cajun seafood boil restaurants in the region. The Boiling Crab is famous for its intense flavors, customizable spice levels, and a casual, hands-on dining experience where customers eat with their hands and are provided with bibs and butcher paper-covered tables.
The menu features a variety of seafood options, including crab, shrimp, lobster, crayfish, oysters, clams, and mussels, as well as signature sauces like Rajun Cajun, Lemon Pepper, Garlic Butter, and their trademarked “The Whole Sha-Bang!”—a blend of all three. The chain has expanded significantly, with 30 locations primarily in the Southwestern United States, including 16 in California (12 in Southern California and 4 in the North). It has also opened international locations in Shanghai, Australia, and Saudi Arabia, among othersen.
The Boiling Crab’s success is attributed to its unique blend of Vietnamese and Cajun influences, creating a distinct Viet-Cajun cuisine that has resonated widely, especially among younger Vietnamese Americans who appreciate sharing their cultural cuisine with a broader audience.
